Method
- Biga: make it and let it ferment (at room temperature) (3 h 30 min)
- Weigh the ingredients
- Make a mix with 1 ice cube and 61 g of water at room temperature (to get it to 11 °C)
- Dissolve the yeast in the water
- Mix roughly
- Transfer to a container, covered but not airtight
- Put the dough in the fridge, covered (11 hours)
- Weigh the ingredients and knead (1 hour)
- Use water at 43 °C
- After the autolyse, mix in the remaining ingredients.
- The bulk rise wants 24-26 °C: If your kitchen is colder, an oven off with the light on helps.
- End of mixing, start of bulk rise (at room temperature) (1 h 15 min)
- Divide/shape, start proofing (at room temperature) (1 h 45 min)
- Shape it tight with an envelope fold, then roll it up into a log.
- Place it in the tin with the seam down.
Proof covered at 26-28 °C (again, the oven-light trick works) for 1:30-2:00, until the dough reaches a centimetre from the rim of the tin. - Ready to cook
