Marocco di Montignoso from the Lunigiana: the recipe

Marocco di Montignoso from the Lunigiana

Marocco di Montignoso is a bread typical of the municipality of Montignoso, in Tuscany.

It is made by mixing corn flour and wheat flour with the addition of oil, black olives and herbs (rosemary, chopped chilli, sage and garlic). It has a round shape 20-25 cm across, dark in colour and golden on the surface.

This bread has been part of the tradition of the municipality of Montignoso for a long time; its name comes from the dark colour, reminiscent of the inhabitants of Morocco.
