Soft butter rolls

These soft butter rolls are tender, versatile and perfect for filling.

The recipe lets you make as many rolls of whatever size you like, for burgers, a buffet, or to bring along to a picnic or a dinner with friends, offering a genuine, homemade alternative to packaged products.

This recipe is freely inspired by, or adapted from, a formula by Master Jeffrey Hamelman.

Ingredients

Method

  1. Weigh the ingredients and knead (25 min)
    • Use water at 27 °C
    Mix all the ingredients in the mixer until moderately developed.
  2. End of mixing, start of bulk rise (at room temperature) (1 hour)
  3. Divide/shape: weigh and form the pieces (40 min)
    • Divide as set in Format and shape into small logs for hot dog buns.
    • Alternatively, for burger buns, divide into pieces of 64 g or more: Lightly flour the work surface and, with a rolling pin, roll each piece into a disk about 3½ inches (9 cm) in diameter.
  4. Start of proofing (at room temperature) (45 min)
    Proof covered until the rolls are quite light to the touch.
  5. Ready to cook
    Brush the tops with melted butter just before baking (not counted in the dough). Brush again with melted butter as soon as they come out of the oven.

Baking

    • conventional oven, without steam
    • Overall temperature: 195 °C
    • Time: 17 minutes
    • No steam. Bake until golden on top: The sides and center stay soft.
